Saying Goodbye

Early this morning (12:30a), I said goodbye to our family pet. He passed peacefully on his own after breathing difficulties surfaced along with a lack of appetite which had developed suddenly. He was diagnosed with lymphoma. His name is Boodie and he was shy of his 16th year by 2.5 months. He was a well taken care of, loved, and adored cat. He was easy going and he brought many smiles to our faces. He will be greatly missed.

My take on #fish tacos #recipe

I really wanted to make vegetable stuffed tacos on this particular night and in my search, I found a recipe for fish tacos

I changed the recipe a bit as any chef, I mean, in training culinary artist, would do, right? 

You can grill the fish or bake it according to the recipe. I cooked mine on the stove top. It cooked well and tasted great. Everything came out good but the next time I will definitely add a little heat (spice). 

Marinade:

1/4 cup extra virgin olive oil
2 T distilled white vinegar
2 T fresh lime juice
2 tsp lime zest
1 1/2 tsp raw honey 
2 cloves garlic, minced
1/2 tsp cumin
1/2 tsp chili powder
1/2 tsp ground fresh pepper
1 tsp hot pepper sauce, or to taste

1 pound tilapia fillets, cut into chunks

Dressing:

1 (8 ounce) container light sour cream
1/2 cup adobo sauce from chipotle peppers (I had adobo seasoning salt. Couldn't find the sauce.)
2 T fresh lime juice
2 tsp lime zest
1/4 tsp cumin
1/4 tsp chili powder
salt and pepper to taste

Toppings:

1 package tortillas (La Tortilla Factory brand is the only brand so far I can find in any store without hydrogenated oils.)
3 ripe tomatoes, seeded and diced
1 bunch cilantro, chopped
1 small head cabbage, cored and shredded
2 limes, cut in wedges






My son likes to help. It gets a tad messy at times but that doesn't change the taste!

Tricolor Pasta and LOTS of #Veggies!

I don’t mean to brag much …but woohoo did I create something delicious in the kitchen today!! My son asked for some pasta for lunch.  Immediately I felt inspired when I saw a bag of frozen roasted bell peppers and onions.

I threw them into a sauce pan with a little EVOO and basil. I boiled water for tri-color rotini while I shredded a carrot and ½ of a zucchini. This was tossed into the sauce pan with the onions and peppers. I continued to cook it on low heat with a cover while the pasta boiled. I had some leftover three cheese spaghetti sauce from Trader Joe’s.  I tossed the pasta with the vegetables and spaghetti sauce. 

The end dish resulted in asking for seconds. It packed lots of flavor and my personal favorite is the addition of more vegetables.
