I managed to convince her to stay home by making a "kids menu" for her. I drew a picture on the front with marker for her to color and gave her some options to choose from:<br /><br />* Shake with choice of peanut butter, strawberry, chocolate chips<br />* Chocolate Breakfast Cake with strawberry (ok, maybe I cheated and called it cake)<br />* Omelette with veggies and cheese<br />* Pancake with strawberry, chocolate chips, or maple syrup<br /><br />She chose the breakfast "cake" :) As I was making the recipe, I noticed that I didn't have the applesauce it calls for. I assumed that the applesauce was a substitute for oil and decided to try it with substituting coconut oil for the applesauce. I used 1 T of coconut oil for the 1 T of applesauce (and then later added the 1 t of coconut oil too). <br /><br />It came out just fine without the applesauce (and the extra coconut oil). I just asked her again what she said about breakfast and she said, "It was the best breakfast ever".
