Baked #salmon with #veggies galore! #Recipe

This was our dinner last Saturday. I love the amount of veggies and heart-healthy fats (salmon). Dr. William Sears says that [Alaskan, wild-caught, cold-water] salmon is the safest and cleanest fish to eat that provides the most Omega-3s (EPA/DHA).

Baked salmon with several servings of veggies! 

Preheat oven to 350 degrees. Salt and coat the fish with Olive Oil of your choice. Make a quick bread crumb mixture using Panko, Parsley, Herbs de Provence (or thyme), Parmesan Cheese, Minced Garlic Cloves and Lemon Zest from ½ of a lemon. Top the fish with the bread crumb mixture. Bake salmon for 20-25 minutes or until fish flakes easily with fork.

Steam rutabagas until fork tender then mash.

Sauté green cabbage, zucchini, and broccoli in olive oil, sea salt, and herbs of your choice. 

I also show the plate my son ate from. He wasn't a big fan of the rutabagas this time around but he ate all of the fish and green veggies. He's 4! =)
