I changed the recipe a bit as any chef, I mean, in training culinary artist, would do, right?
You can grill the fish or bake it according to the recipe. I cooked mine on the stove top. It cooked well and tasted great. Everything came out good but the next time I will definitely add a little heat (spice).
Marinade:
1/4 cup extra virgin olive oil
2 T distilled white vinegar
2 T fresh lime juice
2 tsp lime zest
1 1/2 tsp raw honey
2 cloves garlic, minced
1/2 tsp cumin
1/2 tsp chili powder
1/2 tsp ground fresh pepper
1 tsp hot pepper sauce, or to taste
1 pound tilapia fillets, cut into chunks
Dressing:
1 (8 ounce) container light sour cream
1/2 cup adobo sauce from chipotle peppers (I had adobo seasoning salt. Couldn't find the sauce.)
2 T fresh lime juice
2 tsp lime zest
1/4 tsp cumin
1/4 tsp chili powder
salt and pepper to taste
Toppings:
1 package tortillas (La Tortilla Factory brand is the only brand so far I can find in any store without hydrogenated oils.)
3 ripe tomatoes, seeded and diced
1 bunch cilantro, chopped
1 small head cabbage, cored and shredded
2 limes, cut in wedges
My son likes to help. It gets a tad messy at times but that doesn't change the taste! |
