#Quinoa & Chicken #Recipes

The following three recipes were part of the Scavenger Hunt in which five us were competing to find inside of Delaney's store. We did not get to see what the finished product looked like. I think the first two are definitely doable and the third, if you're good in the kitchen with ingredients, give it a try! 

Quinoa and Vegetable Salad 
   1 lb cooked and chilled quinoa
   1 onion diced
   2 tomatoes diced
   1 carrot peeled and diced
   1/4 cup olive oil
   salt and pepper to taste

Mix all ingredients together. Salt and pepper to taste.

Lemon Herb Roasted Chicken
   2 tbs thyme
   2 tbs rosemary
   whole chicken
   1/2 cup olive oil
   1 onion
   1 whole lemon
   salt and pepper

In a small bowl, place 1/4 cup olive oil, 2 tsb of thyme, 1 tbs of rosemary, 2 tbs of salt and slather on entire outside of chicken. Place 1 whole quarter of an onion and a halved lemon inside chicken cavity. Place chicken on baking sheet and cover well with foil. Place in 350 degree oven for one hour. Remove from oven and remove foil. Return to oven for 15 minutes allowing chicken skin to brown. When browned chicken is done, remove from oven, and allow to rest for 10 minutes. Serve. Buon Appetito!

Green chile & Chicken, organic beans and rice
   Organic beans
   organic rice
   chicken stock

In a medium sauce pan, saute 1 diced yellow onion, in olive oil until slightly transparent and aromatic. Add in 1 tbs of sea salt, beans and 8 cups of water. Bring to a boil, reduce heat to a simmer and cover. Cook beans 1 hour then add in herb packet. continue to cook until beans are soft. Add in extra water if necessary. Stir in rich and recover pot. Allow to simmer approximately 15 minutes or until rice is soft. Serve immediately and top with freshly chopped cilantro, red onion and your favorite salsa.
